If you want to pumpkin spice up your get-togethers this fall, this little Pumpkin Pie Jello Shot recipe is just the thing. Talk about adorable! Thanksgiving or Halloween Jello Shots

Autumn deserves to have its own designated jello shot recipe…and these Pumpkin Pie Shot are definitely it! Skip the typical stuff and make these your classy Halloween jello shots. I will literally put pumpkin in every recipe I can, so these just made sense. Bring them out on Thanksgiving and everyone will be impressed!

How to make Jello Shots (Pumpkin Flavor)

I ended up using pie crust in a mini muffin tin to make this perfect little pumpkin pie jello shot recipe. It worked like a charm! Plus, using actual pie crust makes them taste even more like pumpkin pie. Yum! By far the best jello shots, and so fun to make!

How to make Pumpkin Pie Shots:

  1. Cut pie dough into small circles. I used a skinny drinking glass to press into the dough and make my circles. Use something that is about the size of the mini muffin pan slots.
  2. Place the dough circles into the muffin tin, and bake them according to the pie dough package instructions. Set them aside to cool once they’re done.
  3. Pour 1 cup of water into a saucepan, then sprinkle the gelatin packets over the water. Let it sit for 2 minutes.
  4. Set the stove to medium-high heat, then stir in the pumpkin and sugar. Bring the mixture to a simmer, and then turn off the heat and let it cool.
  5. Mix in the rum/vodka (you can use either), heavy cream, and water.
  6. Now pour the gelatin mixture into the pie crust, and let them set in the refrigerator overnight (or at least 8 hours).

Adding a bit of whipped cream on top before serving adds a little extra fun to this pumpkin pie jello shot recipe!

How long does it take to make jello shots?

Overall, the process of making jello shots is pretty short. Prep time is about 20 minutes or so, so these are really easy. However, jello shots need time to set! They need at least 8 hours in the refrigerator to full set, so I recommend just making them the day before and storing them overnight.

Ingredients

  • 2 packages Pillsbury premade pie crust
  • 2 packets unflavored gelatin powder I used Knox brand
  • 1 1/4 cup water divided
  • 1/3 cup spiced pumpkin pie mix or unspiced canned pumpkin + 1 1/2 tsp pumpkin pie spice
  • 1/2 cup white rum or vodka I used Pearl Vodka, my fave!
  • 1/4 cup granulated sugar
  • 1/2 tablespoon whipping cream heavy cream
  • Whipped topping for garnish optional

Instructions

  • Unroll pie dough and cut into small circles (I used the top of an ice tea glass to get small circles. Place circles in small muffin/cupcake tin and bake according to package instructions. Set aside and allow to cool.
  • Pour 1 cup water into a medium saucepan and sprinkle gelatin packets over water. Let sit for 2 minutes before turning on heat.
  • Turn stovetop on medium-high heat and add pumpkin and sugar, stirring as you add. Allow to simmer and then turn off heat and set aside to allow to cool.
  • Add rum or vodka, heavy cream, and additional 1/4 cup water to mixture and stir until well combined.
  • Pour gelatin mixture into pie crusts and place in refrigerator overnight or for at least 8 hours
  • Top with whipped cream if desired. Enjoy!

If there was an official food of my life, it would be jello shots.

Put the two together and you have a spectacularly tasty, fall-themed way to get drunk. Perfect for college parties, girl’s night get-togethers, and chilly nights sitting on a porch swing by yourself while wrapped in your favorite sweater.

To make these Pumpkin Spice Latte jello shots extra tasty, I used caramel flavored coffee and whipped cream vodka. I think vanilla coffee or vanilla vodka would also compliment the pumpkin spice flavor really well.

  • 1 Cup Caramel Coffee, prepared
  • 1 Tablespoon Gelatin (this is NOT Jell-O, if you use Jello this recipe will not work out)
  • 3 Tablespoons Sweetened Condensed Milk
  • 2 Tsp Pumpkin Pie Spice
  • 1 Cup Whipped Cream Vodka
  • Whipped Cream, for garnish
  1. Pour the caramel coffee into a medium saucepan over medium-high heat. Add in the gelatin and whisk until dissolved.
  2. Add the sweetened condensed milk and whisk until combined.
  3. Add the pumpkin pie spice and whisk until combined.
  4. Bring to a low boil, then remove from heat.
  5. Add the whipped cream vodka. Mix to combine.
  6. Pour the pumpkin spice latte jello shot mixture into plastic shot glasses. Add green straws.
  7. Place in refrigerator for at least 4 hours, until jello is firm.
  8. Top with whipped cream & pumpkin pie spice. Serve immediately.

Pumpkin Pie Jello Shots Recipe

If you like Pumpkin Pie you will love these creative Pumpkin Pie Jello Shots. Creamy and delicious, these fun Jello shots are perfect for holiday parties and get-togethers!

Prep Time: 30 minutes
Cook Time: 10 Minutes
Total Time: 2 Hours 40 Minutes

Ingredients:

• 1 cup Water
• 2 Unflavored Gelatin Packets (Knox, store brand)
• ¼ cup White Sugar
• 1/3 cup Canned Pumpkin Puree
• ¼ tsp Pumpkin Pie Spice
• 2 TBSP Butter
• ½ cup Graham Cracker Crumbs
• ¾ cup Vodka (shown were made with ½ Vodka, ½ Whipped Cream Vodka)
• 2 TBSP Butterscotch Schnapps
• ½ TBSP Heavy Whipping Cream
• Whipped Cream for Garnish

Directions:
• Place 1 cup of water in a bowl.
• Add the unflavored gelatin packets to the water; dissolve.
• Place dissolved gelatin liquid in a pot on the stove on low heat.
• Add white sugar, pumpkin puree and pumpkin pie spice. Stir constantly until smooth. This will take approximately 10 minutes.
• Remove from heat; allow to sit 20 minutes.
• In a microwave melt the butter.
• Place graham cracker crumbs in a bowl; add melted butter; stir with fork until combined.
• Place 1 tablespoon of moist graham cracker crumbs in the bottom of the soufflé cup. Tamp down well. The tighter the tamping, the less crumbs will float to the top of the soufflé cup after you add the gelatin mixture. Set aside.
• Measure out your vodka. Add the butterscotch schnapps and heavy whipping cream to the vodka cup.
• Combine vodka mixture into the pumpkin mixture in the pot. Stir well.
• Carefully pour into the prepared 2 ounce soufflé cups. Allow some headroom and do not fill to the top.
• You may cap your soufflé cups, or wait until the gelatin has set before capping.
• Place in refrigerator to set, approximately 2 hours.
• Garnish with whipped cream before serving.

Layered Pumpkin Pie Jello Shots

Thanksgiving is supposed to be a relaxing holiday, but has a way of quickly devolving into sheer frenzy. For this, jello shots are perfect: they can be prepared the evening before, and they’ll help take the edge off of any last-minute cooking—or family-related stresses you might encounter.

These pumpkin pie jello shots were a hit at the Houstonia offices and will have wide appeal at your Thanksgiving table or party: they’re not too strong for your Aunt Mildred, and pumpkin pie is everyone’s favorite part of the meal, anyway.

There are two layers: a pumpkin layer spiked with butterscotch schnapps, which adds a roundness of flavor that’s otherwise difficult to reproduce, and a whipped cream layer, which gets its consistency from coconut milk and its flavor from a touch of whipped cream vodka.

Yield: about 20 servings

Pumpkin Layer

Ingredients:

  • 1 1/4 cups water (separated into 1 cup and ¼ cup)
  • 2 packets gelatin
  • 1/4 cup granulated sugar
  • 1/3 cup canned pumpkin
  • 1/4 tsp pumpkin pie spice
  • 1/2 cup butterscotch schnapps
  • 1/2 cup heavy whipping cream

Directions:

  1. Pour one cup of water into a saucepan and sprinkle the gelatin across the surface. Allow the gelatin to bloom for one or two minutes.
  2. Apply medium heat to the saucepan. Whisk in canned pumpkin and sugar until all ingredients are combined.
  3. Remove the saucepan from the heat and allow the mixture to cool.
  4. Once cooled, add the remaining 1/4 cup of water, as well as the whipping cream, pumpkin pie spice, and butterscotch schnapps. Whisk until well combined.
  5. Fill serving cups or molds two-thirds of the way and put in the refrigerator. Keep refrigerated for 30 minutes to an hour, until the gelatin has just begun to set.

Whipped Cream Layer

Ingredients:

  • 1 envelope gelatin
  • 3/4 cup coconut milk
  • 1/4 cup granulated sugar
  • 1/2 cup whipped cream vodka

Directions:

  1. Pour coconut milk into a saucepan and sprinkle the gelatin across the surface. Allow the gelatin to bloom for one or two minutes.
  2. Apply low heat, and whisk for five minutes until the gelatin is completely dissolved.
  3. Whisk in the sugar until it has completely dissolved.
  4. Remove the saucepan from the heat and allow the mixture to cool.
  5. Once cooled, add the whipped cream vodka and whisk until combined.
  6. Fill serving cups or molds the rest of the way and refrigerate overnight.

Pro tip: If you like your jello shots to be, er, stronger, you can substitute spiced rum for the butterscotch schnapps. If you do this, make sure to toss in an extra packet of gelatin in step 1; otherwise, your jello won’t set properly.
